However, what makes this county special is the fact that around 20% of the UK's food comes from the area. There are farming families that have looked after the county’s fertile farmlands for centuries - raising cattle, sheep, pigs and deer and growing an abundance of various vegetables.
There’s an absolute mouthwatering choice available. The county also has quite an enviable reputation for its pork and pork products. Unique to the county is stuffed chine (a cold meat dish), Haslet, a roasted plain or savoury sausage meat and plum bread. Some exotic foods, such as fresh ostrich and pak choi are also produced locally. For seafood lovers, the pollution-free waters of the Wash are especially good for cockles and mussels. And no stay in the county would be complete without tasting the world-famous sausage, localized recipes for which, tend to be a closely guarded secret!
TV's flying cook Rachel Green grew up on a farm in the county and promotes the goodness and variety available. Her saying for gourmet dining is "Eat locally, eat seasonally, eat well".
